Resultatet er blevet ret godt! Rugbr\u00f8dene er blandt dem, jeg har bagt, med bedst h\u00e6veevne og mest lufttig krumme. Popcornene er selvf\u00f8lgelig poppede p\u00e5 forh\u00e5nd, og jeg er omhyggelig med kun at putte poppede popcorn i, s\u00e5 man ikke skal kn\u00e6kke t\u00e6nderne p\u00e5 en h\u00e5rd kerne. N\u00e5r surdejen er aktiv og fyldt med sm\u00e5 bobler blandes den med vandet, h\u00f8rfr\u00f8ene og rugkernerne i en stor sk\u00e5l. Popcornene poppes uden salt&#8230; Her indskyder jeg lige, hvordan popcorn skal poppes i gryde.<\/p>\n\n\n\n<p class=\"has-pale-cyan-blue-background-color has-background\"><strong>S\u00e5dan popper man popcorn i gryde<\/strong>:<br>Tag en tykbundet gryde med l\u00e5g, som helst ikke er alt for tung. Put 2-3 spiseskefulde olie i bunden og alle 50 gram majskerner. T\u00e6nd p\u00e5 h\u00f8jvarme. Vendt med at putte l\u00e5get p\u00e5 gryden. Hold \u00f8je med majskernerne. Put f\u00f8rst l\u00e5get p\u00e5 n\u00e5r den f\u00f8rste kerne popper. Den f\u00f8rste kerne springer aldrig op af gryden (eller jeg har ihvertfald aldrig oplevet det, og jeg har spist mange popcorn). N\u00e5r l\u00e5get er kommet p\u00e5, skal majskernerne rystes rundt i gryden undervejs. Det kr\u00e6ver et godt tag omkring grydens h\u00e5ndtag og op om l\u00e5get &#8211; med grydelapper i mellem. N\u00e5r der begynder at v\u00e6re s\u00e5 mange popcorn i gryden, at de ikke sl\u00e5r mod l\u00e5get mere, kan man lukke lidt damp af gryden, s\u00e5 popcornene bliver mest muligt spr\u00f8de. Gryden skal af varmen og popcornene over i en sk\u00e5l, n\u00e5r der begynder at v\u00e6re 5-10 sekunder mellem at de popper. S\u00e5dan f\u00e5r man de bedste og mest spr\u00f8de popcorn i gryde!<\/p>\n\n\n\n<p>N\u00e5r du har poppet popcornene, s\u00e5 skal de upoppede popcorn i bunden af sk\u00e5len lige sorteres fra. Nu kan popcorn, salt, sukker, maltmel og halvdelen (300 gram) af rugmelet r\u00f8res ud i vandet. Du st\u00e5r tilbage med en meget v\u00e5d dej, men popcornene skal nok suge lidt. Popcornene er n\u00e6sten opl\u00f8ste\/omsatte af m\u00e6lkesyrebakterier og g\u00e6ren fra surdejen. Dejen skal gerne have en konsistens som fast havregr\u00f8d. To forme sm\u00f8res grundigt med sm\u00f8r. Dejen fordeles i formene, s\u00e5 der er plads til at de kan h\u00e6ve. Det vil sige, at de kun skal fyldes 2\/3-dele med dej. Br\u00f8dene skal h\u00e6ve 1 time til halvanden mere p\u00e5 k\u00f8kkenbordet. De kan med fordel d\u00e6kkes med et fugtigt viskestykke. Ovnen forvarmes til 240\u00b0C. Br\u00f8dene prikkes med en v\u00e5d strikkepind og pensles let med vand, inden de s\u00e6ttes i ovnen. Ovnen skrues med p\u00e5 180\u00b0C med det samme. Efter 5 kvarter tjekkes temperaturen med et stegetermometer.
