Det er en udgave af Charlies Rugbr\u00f8d fra \u00c5rstiderne. Jeg har skiftet lidt af kernerne ud med sesamfr\u00f8 og tilf\u00f8jet lidt m\u00f8rkt maltmel. I den originale opskrift er der tilsat lidt g\u00e6r udover surdejen. Det g\u00f8r, at man er sikker p\u00e5 en god h\u00e6vning, uden at skulle bruge dagevis p\u00e5 det. Det er et godt hverdagsrugbr\u00f8d, fordi der er enkelt at bage. Hvis surdejen er god, s\u00e5 beh\u00f8ves g\u00e6ren ikke. Surdejen genopfriskes med 2 dl vand og 2 dl rugmel i en sk\u00e5l. Der skal laves rigeligt. Hvis det flyder er surdejen aktiv. Synker surdejen til bunds s\u00e5 tils\u00e6t en smule vand og rugmel og vendt en times tid, og lav testen igen. Surdejen skal gerne v\u00e6re fyldt af sm\u00e5 bobler. N\u00e5r surdejen er klar blandes den med resten af ingredienserne blandes i en stor sk\u00e5l. Husk at gemme lidt surdej til n\u00e6ste gang. Dejen er ret v\u00e5d og skal minde om fast havregr\u00f8d i konsistensen.\u00a0 Den h\u00e6ldes p\u00e5 to smurte forme og presses ned p\u00e5 plads med en v\u00e5d spiseske. Formene skal gerne v\u00e6re 2\/3 dele fyldte. Lad br\u00f8dene h\u00e6ve ved stuetemperatur i cirka 4 timer. De skal gerne n\u00e5 op til kanten af formene og have sm\u00e5 bobler i overfladen. Ovnen forvarmes til 160\u00b0C. F\u00f8r br\u00f8dene stilles i ovnen prikkes de med en v\u00e5d strikkepind eller gaffel. De skal bages i cirka 2 timer (ofte lidt mere) for at n\u00e5 en kernetemperatur p\u00e5 98\u00b0C.
